Keto Challenge Catch-up Days

I REALLY need to work harder to get here to update every day, or at least every other day.  It's harder with each passing day to get caught up. Let me start by telling you about Friday, June 2.  My husband met me when I got off work, as did my oldest children's grandmother, my "mom".  We then headed to my youngest grandson's high school graduation.  The only thing I can tell you about Friday is the day at work was hectic and the evening was full of excitement and, of course, tears. I can't remember exactly what I had to eat that day, but I can tell you my husband and I tried to stick with foods that are allowed on my Keto challenge. Saturday lunch I made a Keto pizza.  OH MY!!! It was so surprisingly good! I was blown away.  Seriously, I felt like I was cheating even though this recipe was right of the challenge itself!  I think that is what has surprised me the most. Keto Challenge Day Four

We strayed off the "plan menu" tonight, however we DID eat something completely in keeping with the Ketogenic allowable foods.  My husband prepared some liver for us tonight. He cooked it with bacon and spread pesto on it. We each had 1/2 an avocado on the side.  It was REALLY good!  Growing up I was NOT a fan of liver at all. Fortunately I am married to a man who is quite a cook! His liver and onions is the best I've ever had, and this liver with pesto is right up there too! I want  to tell you about one of the feral cats that we've been taking care of, but I don't have time this evening. And tomorrow after work we are headed to my grandson's high school graduation!!  I'll try to get a quick post tomorrow, and will catch up for sure this weekend. Keto Challenge Day Three

Today is not a fair day to talk about the Ketogenic Challenge. It's been a rough day for me.  Spring has sprung, there was pollen of some sort out in force. Combine that with perfumes and other fragrances in the office, and I struggled today with my allergies and asthma.  I didn't have much of an appetite. Come to think about it though, I haven't been hungry since I starting this challenge!  I mean, look at what I came home to tonight!  This casserole had ground beef, shredded cabbage, Tex-Mex seasoning, and cheese... LOTS of cheese! The food I've been eating for this challenge is amazing.  I am satisfied after each meal  , and don't get hungry between meals so I'm not snacking all day long like I used to. I'll be back tomorrow, and hopefully a bit more chatty!

Keto Challenge Day Two

Most days right now will begin with a couple of eggs, scrambled or fried, maybe some bacon, so I won't waste your time by repeating the same thing every day. I'll only talk about breakfast if it's something other than a couple of eggs. And lunch is usually leftovers from the night before, which meant that today's lunch was leftover salmon and spinach from last night's supper. OH MY!!! In case you were wondering, the salmon leftovers were just as yummy as the salmon we had for supper yesterday. That's one of the really nice things about this 14 day challenge. You cook enough for dinner that there will be leftovers for the following day's lunch. I don't have to plan my lunch, or prepare something separate. I just put the leftovers in a container and take it to work with me the next day! The ease of the program and the deliciousness of the food so far mean that I am not struggling to follow the menu plan. Not to mention the fact that it's already...

Keto Challenge Day One

First for the hard part... the beginning stats.  My official starting weight as of Sunday May 28 was 181.2, and I did take pictures... I just don't have the courage to post them.  I took the pictures wearing yoga pants and tank top. NOT a pretty sight, but an honest one.  I also measured my waist and thigh, just another way to help track my progress. Off to a great start so far!  For breakfast I had a couple of fried eggs. Nothing exciting, but a protein packed start to the day.  Lunch was a nice "Caesar" salad. I didn't have Romaine, so used spring greens instead, topped with chicken, bacon, grated Parmesan cheese and the dressing from the recipes in the challenge that I am doing. Dinner was really good!  It was salmon with a chili/parmesan dressing on a bed of spinach sauted in butter.  YUM!!!!   If the food continues to be as good as this, I am really going to enjoy this challenge! My husband is also enjoying the food. ...

Ketogenic Challenge

HI!!  Thanks for stopping by! Tomorrow I start a 2 week Ketogenic Challenge. I've been playing with a couple of the recipes in the last couple of days, but tomorrow is DAY 1.  Tomorrow I weigh, measure, take pictures, and make my first "keto challenge" meal. I'll be posting my progress here in my blog. Hopefully that will accomplish 2 things:           1. I will start updating my blog again           2. I get to readily see the progress by posting before and after pictures If I see good progress over the next 2 weeks, I will continue with the Ketogenic lifestyle and see if I can finally reach my goals! Wish me lunch.  Some encouragement would be helpful also! Until tomorrow tomorrow then.  Right now it's back to shampooing the carpet.

Welcome to 2017

Happy New Year!   I hope that 2017 will be an amazing year for all of us.  It's sure starting out good for me! My mini cooper died a few months ago, so at the end of November, my husband bought me a fun ride!  Meet Lucy, my new-to-me LadyBug!! She has pawprints for her ladybug spots... I just started a GREAT new job a few days before the start of the new year, so my work life will be filled with lots of new opportunities to learn and grow, both personally and professionally, new friendships to build, new challenges                                     1) 2017 goal: to continue my commitment to be a lifelong learner My new employer also offers all kinds of Wellness incentives, including things like reimbursement of certain gym/fitness fee's, etc. So I am going to join the local YMCA and sign up for a class or two!              2)...
